Ingredients for 4 servings:
- 250 g chicken breast fillet(s) or chicken breasts
- 1 handful of vegetables, e.g. carrots, zucchini, broccoli, asparagus,…
- 1 cup rice
- 2 ½ cups vegetable broth
- 1 tbsp Italian herbs
- some salt and pepper
- 1 tbsp butter
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
The cup used holds approximately 200 ml. If necessary, cut the chicken fillets or breasts into smaller pieces and season with salt and pepper. Cut the vegetables into small pieces. We always use whatever is at home or in season. Melt the butter in a large, lidded pan and sear the chicken fillets on both sides, but do not cook them through. Then remove the meat from the pan. Add the rice to the pan, pour over the vegetable stock, and stir in the herbs. Sprinkle the vegetables over the rice and then place the chicken pieces on top. Place the lid on the pan and let the dish simmer gently for 25 minutes.
