Ingredients for 4 servings:
- 2 tsp paprika powder, smoked
- 1 tsp oregano
- 1 tsp thyme
- 1 garlic clove(s)
- ½ tsp onion powder
- ¼ tsp cayenne pepper
- ¼ tsp black pepper
- ¼ tsp salt
- 1 tbsp olive oil
- 1 tbsp butter
- 400 g chicken breast
- 1 onion(s)
- 250g penne
- 400 g tomatoes, chopped
- 250 ml chicken broth
- 100 g cream cheese
- 3 spring onions
- 1 red chili pepper(s), to taste

One-pot pasta with creamy Cajun chicken breast
Mix the ingredients for the Cajun seasoning and place it in a small bowl. Cut the chicken breast into bite-sized pieces. Peel and dice the onion. Peel and mince the garlic. Dice the chili and slice the spring onions into rings. Place the chicken pieces in a bowl and toss the Cajun seasoning over them. Mix the chicken with the seasonings well. Add the olive oil and butter to a large, deep frying pan and heat over medium heat until the pan is very hot and the butter is melted and foamy. Add the seasoned chicken to the frying pan and cook for a few minutes on each side until the outside starts to brown. The chicken does not need to be cooked through at this point. Add the diced onion, chili, and garlic to the pan and cook for about 2 more minutes, or until the onions are softened. Stir well to prevent burning. Add the pasta, chopped tomatoes with their juices, and the chicken stock to the pan. Stir until evenly mixed. Cover and bring the broth to a boil. Bring everything to a boil. Then reduce heat to medium and simmer for about 10 minutes, until the pasta is tender and the liquid has thickened. Stir occasionally to prevent burning. Add the cream cheese and stir until it has melted into the sauce. Sprinkle the pasta with finely chopped spring onions and serve.
