One Pot Pasta with Leaf Spinach

Ingredients for 2 servings:

  • 250 g pasta of your choice
  • 200 g leaf spinach, frozen
  • 200 ml cream
  • 350 ml vegetable stock
  • salt and pepper
  • Herbs to taste
  • 1 tbsp oil for frying
  • 1 small onion(s)
  • 1 small garlic clove(s)
  • some Parmesan

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Easy and quick to prepare and super tasty

Peel and dice the onions, and fry them in a little oil. Chop or crush the garlic clove and fry briefly. Add the spinach and pasta and immediately deglaze with vegetable stock and cream, seasoning to taste (I used salt, pepper, and herbs). Bring to a boil briefly, then simmer over low heat for about 15-20 minutes, until the pasta is tender, adding a little more liquid if needed. After serving, grate some Parmesan cheese over the pasta, and you’re done. This serves 2-3 people.
