Ingredients for 2 servings:
- 250 g minced meat
- 2 tbsp olive oil
- 1 can of corn
- 1 bell pepper(s), red
- 1 zucchini
- 1 onion(s)
- 250 g pasta
- 1 can of tomatoes, chopped
- 2 tbsp, heaped beef broth
- 1 tbsp paprika powder, sweet
- ½ tsp coriander
- ½ tsp thyme
- 1 tsp oregano
- 1 tsp curry
- e.g. salt and pepper
- e.g. chili
- 750 ml water
- 1 can kidney beans
- e.g. Parmesan, grated

easy and fast
Brown the ground beef with olive oil in a large pot. Meanwhile, drain the corn, dice the bell pepper, zucchini, and onion, and add everything. Add the pasta, tomatoes, herbs, spices, and water, stir everything together, and bring to a boil. Cover and simmer on low heat for about 15 minutes, until the pasta is tender, stirring occasionally. Just before the end, add the kidney beans and heat through. Sprinkle with grated Parmesan cheese, if desired, before serving.
