One-pot pasta with vegetables

Ingredients for 4 servings:

  • 4 carrots
  • 1 onion(s)
  • oil
  • 1.2 liters of vegetable broth
  • 1 cup sour cream
  • 500 g pasta
  • Parsley
  • 2 spring onions
  • 100 g Parmesan

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Chop the carrots, onion, and spring onions. Prepare the vegetable broth. Heat the oil in a saucepan, sauté the onions, and add the carrots. Sauté for 5 minutes. Pour in the vegetable broth, add the sour cream, and mix everything together. Add the pasta and cook for 15 minutes until the sauce is creamy. Finally, stir in the spring onions, parsley, and cheese. If you like, you can also chop up some meat.
