Vegetarian Spaghetti Carbonara alla Donna Giulia

Ingredients for 4 servings:

  • 500 g wholemeal spaghetti made from spelt flour
  • 1 egg(s)
  • 4 egg yolks
  • 150 g Parmesan, grated or rennet-free hard cheese
  • 80 g dried tomatoes
  • 100 ml cream
  • 1 large onion(s)
  • 3 garlic cloves
  • 1 bunch of parsley or chives
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Finely dice the sun-dried tomatoes. Finely dice the onions and garlic. Mix together the egg, Parmesan cheese, cream, and parsley and season with salt and pepper. Be careful not to add too much salt, as the sun-dried tomatoes are already very flavorful. Sauté the tomatoes, onions, and garlic in a large pan in a little olive oil. Cook the spaghetti according to the package instructions, adding about 4 tablespoons of pasta water to the cream mixture halfway through. Then drain the spaghetti in a colander and add it to the pan with the sautéed tomatoes and onions. Pour the egg mixture over the top and mix everything together carefully. Serve quickly!
