One-pot with potato, zucchini, onion, tomato and cream cheese

Ingredients for 2 servings:

  • 1 m.-sized potato(s)
  • 1 onion(s)
  • 1 dash of olive oil
  • 1 zucchini
  • 2 garlic cloves
  • 4 m.-sized tomatoes
  • 1 pinch(s) of sugar
  • 3 tbsp Italian herbs, dried
  • 1 shot of water
  • ½ pack of herb cream cheese, approx. 100 g
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Cut all the vegetables into pieces. Sauté the potatoes and onions in olive oil, add the zucchini, tomatoes, sugar, garlic cloves, dried Italian herbs, and a splash of water, and bring to a boil. Add the herbed cream cheese and simmer uncovered, stirring occasionally. Season with salt and pepper, and let simmer for about 20 minutes until softened. This is a delicious stew and a great way to use up leftovers. Note: Sugar should never be missing from tomato dishes; it rounds out the tomato flavor.
