Onion and garlic cream soup with toast stars

Ingredients for 4 servings:

  • 500 g vegetable onions or white onions
  • 3 cloves garlic
  • 3 tbsp butter, alternatively rapeseed oil
  • 3 tbsp flour
  • 300 ml broth
  • 200 ml cream
  • salt and pepper
  • nutmeg
  • 1 pinch(s) of cinnamon powder, optional
  • 2 slices of toasted bread
  • 2 tbsp herbs, chopped (celery leaves, chives or parsley)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel and roughly chop the onions and sauté in oil. Crush the garlic and add the broth. Simmer until tender, or cook in a pressure cooker for 5 minutes. Puree everything, then add the flour and cream. Stir in and bring to a boil until combined. Alternatively, you can use starch. Season to taste and serve. Sprinkle with herbs and decorate with stars cut out of the toasted bread.
