Ingredients for 6 servings:
- 800 g onion(s), peeled and weighed
- 4 large red bell peppers, cleaned, about 500 g
- 4 small tomatoes
- 1 large chili pepper(s), red, pitted and finely diced
- 3 tbsp oil
- 3 tbsp tomato paste
- 75 g sugar
- 3 tsp salt
- 6 tbsp vinegar
- ¼ liter dry white wine
- 1 tsp sweet paprika powder
- 3 tbsp peppercorns, pickled red or dried green
- Pepper, from the mill
- Vegetable broth, instant
- Sambal Oelek
Instructions

Peel and dice the onions. Clean, deseed, and dice the bell peppers. Blanch the tomatoes in hot oil, peel them, and dice them as well. Deseed and finely dice the chili pepper. Fry the onions and bell peppers together in hot oil, then add the diced tomatoes and chili. Stir in the tomato paste and sauté briefly. Then stir in the sugar, salt, vinegar, wine, and paprika. Bring everything to a boil and simmer covered for about 1 hour. Stir in the peppercorns and season the relish with stock powder, sambal oelek, salt, and pepper. Simmer with the lid off for about 30 minutes, then pour into prepared jars. Seal the jars and turn them upside down for 5 minutes. This keeps well for several months. It’s especially good for grilling.
