Onion quiche with feta cheese, sage and bacon

Ingredients for 4 servings:

  • 1 package of puff pastry, ready-made fresh or frozen
  • 1 package of sheep’s cheese
  • 3 onions, white
  • 3 onions, red
  • 1 bunch of spring onions
  • 1 cup sour cream
  • 1 cup goat’s cheese
  • 8 leaves of sage, small
  • 4 slices of bacon
  • 2 eggs
  • lemon peel
  • lemon juice
  • salt and pepper
  • Cayenne pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

totally quick, uncomplicated and delicious!!!

Preheat oven to 160°C. Line a springform pan with the (thawed) puff pastry and prick a few holes with a fork. Slice the red and white onions into thin rings and halve the spring onions lengthwise. Sauté all the onions in a little olive oil, season with a little lemon juice and zest, and season with pepper. Let cool. Spread half of the onion mixture on the puff pastry. Crumble the feta cheese over the top. Mix the sour cream with the goat’s cheese and two eggs, and add a little cayenne pepper. Pour this mixture over the feta cheese and smooth it down. Then add the remaining onion mixture on top and garnish with halved bacon strips and sage. Grind fresh pepper over the mixture again. Place the whole thing in the preheated oven for about half an hour. Perfect as a party favor or with a light wine.
