Ingredients for 4 servings:
- 4 thick onions, peeled, cut into wafer-thin slices
- 200 g meat sausage, cut into fine strips
- 2 red bell peppers, cut into fine strips
- 6 tbsp oil
- 3 tbsp vinegar
- Salt and pepper, white
- little sugar
- 1 tsp mustard, hot
- some parsley for garnishing
- 2 eggs, hard-boiled, quartered for garnish
Instructions
Working time approx. 15 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 15 minutes
Mix together oil, vinegar, mustard, salt, pepper, and sugar to make a dressing. Combine the onions, sausage, and bell peppers in a bowl. Pour the dressing over the salad and mix all ingredients well. Cover the salad and let it marinate in the refrigerator for a few hours. Just before serving, toss again and garnish with parsley and eggs. Serve with fresh baguette and a cold beer. This salad also makes a great buffet.
