Onion soup à la Gabi

Ingredients for 4 servings:

  • 500 g onion(s)
  • 1 ¼ liters vegetable broth
  • 1 garlic clove(s)
  • 2 tbsp oil
  • 1 tbsp flour
  • 1 jar white wine, dry
  • salt and pepper
  • curry powder
  • 120 g cheese, grated
  • 4 slices of white bread

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Slice the onions into rings. Crush the garlic clove with a little salt and slowly roast both in hot oil until golden brown. Dust with flour and pour in the hot broth and wine, then simmer for a few minutes. Season with salt, pepper, and curry powder to taste. Toast the slices of white bread, place them in ovenproof soup bowls, and ladle the soup over them. Grate the cheese and sprinkle it on top. Bake in a preheated oven at medium heat for about 10 minutes.
