Ingredients
- 500 gr Onions
- 800 ml Broth
- 200 ml White wine
- 4 Discs Toast
- 8 tbsp Gouda cheese
- 1 tbsp Clarified butter
- 2 tbsp Flour
- 1 tsp Sugar
- Salt
- Pepper
Instructions
- Peel the onions and cut into fine rings. Melt the clarified butter in the saucepan and fry the onion rings until they are golden yellow. Add a teaspoon of sugar and let it caramelize
- Dust with the flour and let it sweat, deglaze with the white wine and bring to the boil briefly. Then pour in the broth.
- Simmer over low heat for 20 minutes.
- Cover the toast with 2 tablespoons of Gouda cheese and let it gratin in the oven
- Cut the toast into quarters and garnish the soup with it
