Onion Soup with Gratinated Toast

The perfect onion soup with gratinated toast recipe with a picture and simple step-by-step instructions.

  • 500 gr Onions
  • 800 ml Broth
  • 200 ml White wine
  • 4 Discs Toast
  • 8 tbsp Gouda cheese
  • 1 tbsp Clarified butter
  • 2 tbsp Flour
  • 1 tsp Sugar
  • Salt
  • Pepper
  1. Peel the onions and cut into fine rings. Melt the clarified butter in the saucepan and fry the onion rings until they are golden yellow. Add a teaspoon of sugar and let it caramelize
  2. Dust with the flour and let it sweat, deglaze with the white wine and bring to the boil briefly. Then pour in the broth.
  3. Simmer over low heat for 20 minutes.
  4. Cover the toast with 2 tablespoons of Gouda cheese and let it gratin in the oven
  5. Cut the toast into quarters and garnish the soup with it
