Ingredients
 

  • 500 gr Onions
  • 800 ml Broth
  • 200 ml White wine
  • 4 Discs Toast
  • 8 tbsp Gouda cheese
  • 1 tbsp Clarified butter
  • 2 tbsp Flour
  • 1 tsp Sugar
  • Salt
  • Pepper

Instructions
 

  • Peel the onions and cut into fine rings. Melt the clarified butter in the saucepan and fry the onion rings until they are golden yellow. Add a teaspoon of sugar and let it caramelize
  • Dust with the flour and let it sweat, deglaze with the white wine and bring to the boil briefly. Then pour in the broth.
  • Simmer over low heat for 20 minutes.
  • Cover the toast with 2 tablespoons of Gouda cheese and let it gratin in the oven
  • Cut the toast into quarters and garnish the soup with it
