Instructions: How to properly open oysters
The professional uses a chain glove to protect his hands. Alternatively, you can simply wrap one hand in a towel. An oyster knife is used to open it. If you use a different knife, you should also protect your other hand if there is no slip protection.
- Don’t use chain gloves, place a damp rag on a solid work surface.
- Place the oyster bulbous side down and use the oyster knife.
- Insert the tip of the oyster knife into the small opening on the narrow side of the oyster.
- With a jerky and rocking movement and a little strength, you can now slowly break open the oyster.
- Then pull the knife once through the oyster so that the shell comes off completely. Don’t touch the oyster with your bare hand just yet.
- Lift the lid off the oyster and set it aside. You can collect small fragments with the blade.
- Now loosen the oyster meat from the mussel with a knife or a small cable.
- Slurp the meat straight from the mussel or remove it for other processing.
