Orange-Cardamom Ears

Ingredients for 1 servings:

  • 1 pack of puff pastry (refrigerated, rolled)
  • 30 g sugar
  • 30 g sugar, brown or raw or cane sugar
  • 1 pck. orange peel, grated or the grated peel of 1 untreated orange
  • 1 tsp cardamom, ground

Instructions

Working time approx. 15 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Puff pastry

Sprinkle the 30g of sugar onto a clean work surface. Place the puff pastry on top and roll it briefly with a rolling pin to help the sugar adhere to the dough. Mix the orange zest, brown sugar, and cardamom together and sprinkle evenly onto the dough. Now roll the dough up halfway from each long side, pressing lightly. The “ears” should meet in the middle. Place the roll in the refrigerator for 15 minutes. Meanwhile, preheat the oven to 180°C (top/bottom heat) and line a baking sheet with baking paper. Cut the chilled dough into 1cm-thick slices and place them on the prepared baking sheet, leaving some space between them. Place the ears in the hot oven and bake for about 10-15 minutes until golden brown. Please keep an eye on the pastry, as it can burn easily! Let cool on a wire rack.
