Ingredients for 1 servings:
- 2 organic oranges
- 3 eggs
- 1 pinch of salt
- 150 g sugar
- 2 tbsp orange liqueur
- 275 g desiccated coconut
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes
Rinse the oranges with hot water and rub them dry. Using a zester, peel off the zest in fine strips. Beat the eggs and salt until frothy. Slowly add the sugar. Add the orange liqueur and orange zest and fold in the coconut flakes. Using two moist teaspoons, place small heaps on a baking sheet lined with baking paper and bake in a preheated oven at 175°C (top/bottom heat) for 8 minutes. Turn off the oven and let the coconut flakes dry for a further 12 minutes with the door slightly ajar (with a wooden spoon in the door). Allow the coconut macaroons to cool on a wire rack.
