Ingredients for 1 servings:

  • 20 g butter
  • 100 g chocolate, milk
  • 200 g biscuits, Sablés (butter biscuits)
  • 500 g quark
  • 100 g sugar
  • 2 tsp, heaped cinnamon
  • 1 orange(s), grated peel and some juice
  • 6 sheets of gelatin
  • 2 ½ dl cream
  • 1 tbsp pistachios, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 15 minutes

Heat the butter and chocolate. Meanwhile, crumble the sablés (e.g., in a plastic bag) and mix them with the melted chocolate. Line a 20cm springform pan with baking paper and fill it with the chocolate crumb mixture, spreading it out or pressing it down lightly. Mix the quark, sugar, cinnamon, and orange zest. Soften the gelatin leaves in cold water, squeeze them dry, and dissolve them in about 5 tablespoons of warm orange juice. Add them to the quark mixture and stir well. Whip the cream until stiff and fold them into the quark mixture. Pour everything into the springform pan, smooth it down, and refrigerate for at least 5 hours. Garnish with the pistachios before serving.
