Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Orange cookies – makes about 70 pieces
Knead the wheat flour, baking powder, sugar, vanilla sugar, egg, and butter into a shortcrust pastry. Chill. Divide the dough into two equal pieces and roll out into two equal rectangles (approx. 32 x 22 cm). Place one sheet on the baking sheet. For the filling, mix the grated almonds and sugar with enough orange juice to create a spreadable mixture. Spread this evenly over the pastry sheet on the baking sheet (leaving about 1 cm free at the edge), place the other half of the dough on top, and press the edges together firmly. Prick several times with a fork. Bake at 175-195°C (top/bottom heat) for about 20-25 minutes until golden brown. Make a glaze from powdered sugar and 1 tablespoon of orange juice and spread it over the pastry sheet immediately after baking. Once cooled, cut the pastry into small squares.
