Orange yogurt waffles

Ingredients for 4 servings:

  • 3 orange(s), organic navel (or blood oranges), zest and juice
  • 1 cup of orange jam (1 cup is about 250 ml)
  • Orange juice (freshly squeezed)
  • ½ lemon(s)
  • 1 cup(s) flour
  • ¼ cup bran (wheat bran)
  • 1 tsp baking powder
  • 2 tsp baking soda, (bicarbonate)
  • n. B. Salt
  • 4 eggs
  • 2 cups natural yogurt
  • orange juice
  • 2 tbsp sugar
  • 1 pinch(s) nutmeg, freshly grated
  • 6 tbsp butter

These delicate waffles are made according to an American recipe, have a very pleasant orange aroma, and are a great way to start the morning. The marmalade syrup is delicious. If sweet, juicy blood oranges are available, they add a lovely pop of color to the dish. Zest the oranges (1 tablespoon). Squeeze the oranges. For the syrup, gently heat the marmalade, half of the orange juice, and 1 teaspoon of lemon juice in a sauté pan until the marmalade begins to melt. Mix the dry ingredients (flour, wheat bran, baking powder, baking soda, and 1/4 teaspoon of salt) in a bowl. Everything up to this point can be prepared hours in advance. Melt 6 tablespoons of butter. Heat the waffle iron. Separate the eggs and beat the egg yolks until frothy. Add the yogurt, orange zest, the other half of the orange juice, sugar, nutmeg, and melted butter. Gradually fold in the flour mixture, stirring until the ingredients are just combined. Beat the egg whites until stiff peaks form and fold the stiff egg white foam into the batter. Pour the batter in portions into a preheated waffle iron and bake until golden brown. Reheat the syrup, if desired. Serve waffles with the syrup.
