Oriental chickpea salad

Ingredients for 4 servings:

  • 400 g chickpeas from the can
  • 3 tomatoes
  • 100 g feta cheese
  • 1 onion(s)
  • 2 garlic cloves
  • 2 lemons
  • ¼ bunch basil
  • ¼ bunch parsley
  • ¼ bunch coriander
  • olive oil
  • cumin
  • Garam Masala
  • Salt
  • Pepper, white

vegetarian, very healthy and super tasty

Wash the chickpeas thoroughly and drain. Place all but a small handful in a large bowl. Finely crush or puree the reserved chickpeas in a mortar and pestle. Add the juice of one lemon and an equal amount of olive oil. Pour the resulting mixture over the chickpeas and stir well. Finely dice the onions and garlic, chop the tomatoes, and fold in. Roughly crumble the feta over the salad, then chop the herbs and stir in. Season the salad with cumin, garam masala, white pepper, and salt. Add more lemon if desired. If you like, you can use chopped mint instead of coriander. The salad tastes best when well-seasoned and is perfect as a side dish or main course.
