Oriental chickpea stew

Ingredients for 3 servings:

  • 1 onion(s)
  • 2 tbsp olive oil
  • 1 can chickpeas (soak fresh ones accordingly)
  • 2 tbsp raisins
  • 1 can of tomatoes, chopped
  • 250 ml vegetable stock
  • 1 pinch of cinnamon
  • 1 pinch of clove(s)
  • 1 pinch of cardamom
  • 1 pinch of paprika powder, hot

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and dice the onion. Then sauté in heated olive oil until translucent. Drain the chickpeas. Add them to the onion along with the spices and sauté for about 1 minute, stirring. Add the vegetable stock, tomatoes, and raisins. Season to taste and bring to a boil briefly. Serve hot. Serve with warmed flatbread or olive bread. Tips: Instead of the individual spices, I’ve also simply added gingerbread spice, which was also very tasty. Personally, I prefer a slightly higher spice level, but everyone can experiment for themselves. It’s perfect for entertaining, quick and easy, and has always been a hit.
