Oriental roasted potatoes

Ingredients for 2 servings:

  • 600 g potatoes
  • 2 garlic cloves
  • 2 tbsp lime juice
  • 1 tbsp agave syrup
  • 2 tsp turmeric
  • 1 tsp coriander, ground
  • 1 tsp chili flakes
  • 1 handful of parsley, chopped
  • 1 handful of dill, chopped
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Finely dice the garlic. Wash and dice the potatoes, and sauté for 10 minutes. Heat a little olive oil in a large pan and briefly sauté the garlic. Add the turmeric, coriander, and chili flakes and sauté briefly. Stir in the lime juice and agave syrup. Add the potatoes and half of the parsley and dill. Stir-fry everything for 5 minutes until browned and season with salt and pepper. Transfer to a bowl. Stir in the remaining parsley and dill. Serve while still warm.
