Oven-baked fillet with mushrooms

Ingredients for 2 servings:

  • 400 g pork fillet(s)
  • salt and pepper
  • 2 onions
  • 500 g mixed mushrooms (e.g., mushrooms, oyster mushrooms, shiitake)
  • 1 tsp vegetable oil
  • 100 g Cremefine, alternatively 5 tbsp sour cream
  • 3 tbsp cream cheese
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp parsley, chopped
  • 2 slices of baguette

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Pat the pork fillet dry and cut into approximately 1.5 cm thick slices. Season the slices with salt and pepper and place in a baking dish (approx. 25 x 30 cm). Peel the onions and slice them into thin rings. Dry the mushrooms and cut them into pieces. Preheat the oven to 180°C (top/bottom heat) (gas mark 2, fan oven 160°C). Heat oil in a pan. Add the onion rings and mushroom pieces, season with salt, and sauté for about 5 minutes. Top everything with Cremefine and cream cheese. Mix the cornstarch with water, add to the sauce, and simmer for about 1 minute. Season the sauce with salt, pepper, and parsley. Pour the mushroom sauce over the fillet slices. Cook in the oven on the middle rack for about 25-30 minutes. Serve the oven-baked fillet with baguette. For 2 servings, one serving has 488 kcal.
