Ingredients for 5 servings:

  • 500 g pasta
  • 500 g minced meat (beef or mixed)
  • 1 large onion(s)
  • salt and pepper
  • 1 kg diced tomatoes (can also be used)
  • 200 ml ketchup
  • 1 cup cream, crème fraîche or sour cream
  • ½ can corn
  • ½ jar mushrooms, sliced
  • 3 tbsp olive oil
  • 350 g mozzarella, sliced
  • 1 jar of lecho
  • Oil for frying

Drain vegetables from cans and jars, reserving and reserving the liquid. Cook the pasta until half-cooked. Season the minced meat with salt and pepper and sear it in heated oil with the finely chopped onion. Deglaze with the reserved vegetable liquid. Add the diced tomatoes and ketchup. Season to taste. Remove the sauce from the heat and refine it with cream. Do not allow to boil again. Place the pasta in a large casserole dish or, if desired, on a baking sheet. Spread the tomato sauce over it and sprinkle with sweetcorn and mushrooms. Finally, add the jar of lecho. Now cook everything in a preheated oven at 180°C for about 35 minutes. When the liquid from the lecho has reduced, top with mozzarella slices and return to the oven for a few more minutes. Tastes very good and is filling. Tip: If you like it spicier, add chili peppers or piri-piri peppers. But you can also use a traditional Bolognese sauce.
