Ingredients for 4 servings:
- 4 onions, red
- 4 chicken legs
- 4 brioche buns (burger buns)
- 2 cups coleslaw
- 200 g tomato ketchup
- 1 tbsp brown sugar
- 2 tbsp honey
- 2 tbsp mustard
- 1 tbsp Tabasco
- ½ tsp garlic powder
- 2 tbsp BBQ sauce
- ½ tbsp salt
- ½ tbsp pepper

First, mix the marinade from ketchup, sugar, honey, mustard, Tabasco, garlic powder, BBQ sauce, salt, and pepper. This can be slightly sweet, so taste and adjust the seasoning if necessary. Now slice or chunk the onions and arrange them in a baking dish. Then rub the chicken thighs completely with the marinade or toss them in it and place them on top of the onions in the baking dish. Spread the remaining marinade on top. Place the baking dish in a preheated oven at 135°C (top/bottom heat) for a good 3 hours. About 15 minutes before the end of the cooking time, remove the meat from the bone using two forks. If necessary, remove any soft, loose skin and discard it along with the bones. Then pull the meat into further small strands – this will help the meat cool slightly. Mix everything together again and then return it to the oven with the burger buns for another 15 minutes. When everything is ready, place the pulled chicken on the bottom of the bun, spread the coleslaw on top, and close the bun. Serve with homemade wedges. When using raw potatoes, pay close attention to the baking time, as the oven is set to 135°C.
