Ingredients for 4 servings:
- 8 m.-large tomato(s)
- 3 cloves garlic
- 1 chili pepper(s)
- 1 bunch of coriander leaves
- ½ bunch flat-leaf parsley
- 250 g goat’s cheese
- salt and pepper
- 8 tbsp breadcrumbs
- 5 tbsp olive oil

Wash the tomatoes and cut off a small top. Carefully hollow out the tomatoes and place them upside down on kitchen paper. Preheat the oven to 180°C. Peel the garlic. Split the chili pepper, removing the seeds and stem. Finely chop both together with the coriander and flat-leaf parsley and place in a bowl. Dice the cheese. Mix everything together and season with salt and pepper. Fill the tomatoes with the cheese and herb mixture. Sprinkle with the breadcrumbs and drizzle with olive oil. Place in an oiled, ovenproof dish and bake on the middle rack of the oven for 25-30 minutes, until a brown crust forms. Tip: If you don’t like goat’s cheese, you can also use feta in oil instead. However, be very sparing with the salt, as the feta already contains plenty of salt.
