Oven-baked vegetables with halloumi

Ingredients for 1 servings:

  • 1 zucchini
  • 250 g cherry tomatoes
  • 200g halloumi
  • 1 small onion(s)
  • 3 cloves garlic
  • 4 tbsp olive oil
  • e.g. salt and pepper
  • n. B. Herbs of Provence

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Preheat the oven to 180°C fan/convection oven. Wash the zucchini and cut into thin slices. Wash and halve the cherry tomatoes. Peel the onion and cut into thin half rings. Peel the garlic and cut into thin slices. Place everything in a baking dish, pour over 3 tablespoons of olive oil, season generously with salt and pepper, and mix well. Remove the halloumi from the package, cut into thin cubes, and add to the vegetables. Mix well. Now add the Provençal herbs and 1 tablespoon of olive oil and mix again. Place everything in the oven and leave for 25 minutes, stirring once. After 25 minutes, heat the oven to 220°C and bake for another 10 minutes until the desired browning is achieved.
