Oven-baked vegetables with meat

Ingredients for 2 servings:

  • 1 zucchini
  • 2 bell peppers
  • 6 mushrooms
  • 1 tbsp olive oil
  • 1 onion(s)
  • Salt, pepper, herbs as desired
  • 300 g chicken

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the vegetables, roughly dice them, and toss them with oil and seasoning. Place everything in a roasting pan or on a baking sheet and bake at 200 degrees Celsius for 20 minutes. Wash the meat, season to taste, and sear it in a pan for about 5 minutes on each side, alternating between layers, until browned to your liking.
