Instructions
Working time approx. 1 hour; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 30 minutes
for a 28cm springform pan
For the dough, mix lukewarm water with the milk. Add softened butter, yeast, sugar, and salt to this mixture and dissolve everything. Add the egg and flour to the liquid and knead everything into a smooth dough. Let it rise in a warm place until it has doubled in size. Grease a 28 cm springform pan and place a sheet of baking paper on the bottom. Pour two-thirds of the dough into the springform pan and spread it evenly over the bottom and about three fingers’ width around the edges. Quarter the cucumbers and cut into small slices. Cut the tomatoes into small pieces. For the patty, put the ground beef in a bowl. Chop an onion and garlic, add to the ground beef with the seasoning, and mix everything evenly. Fry the ground beef mixture in a little oil in a pan until crispy, then spread it in the springform pan. Slice the remaining onions into rings and spread them over the ground beef. Spread the ketchup over the onion rings. Put the cucumbers and tomatoes in the springform pan and spread the mayonnaise or remoulade on top. Add the cheese slices. Roll out the remaining dough into a round, slightly larger than the circumference of the springform pan. Place the dough lid on top of the cheese, sealing the edges firmly with the base. Mix the egg and water. Brush the dough over the burger and sprinkle with sesame seeds. Place the springform pan on a baking sheet lined with parchment paper. Bake in an oven preheated to 200°C (top/bottom heat) or 190°C (fan oven) for about 30 minutes on the middle rack. Check the oven frequently, as every oven bakes differently.
