Pork fillet with lemon marinade

Ingredients for 2 servings:

  • 400 g pork fillet(s)
  • 2 tbsp olive oil
  • ½ lemon(s), juice
  • 1 tsp pepper
  • 1 tsp thyme leaves
  • 1 tbsp rosemary needles
  • e.g. sea salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Pat the fillet dry, season with salt, and sear on both sides in a pan with olive oil. Roast in an oven preheated to 180°C (top/bottom heat) for about 30 minutes on the middle rack. Meanwhile, mix the lemon juice with the pepper and season with thyme and rosemary. After the roasting time, pour the marinade over the meat and roast the fillet for another 10 minutes at 160°C (top/bottom heat). Serve with tagliatelle and a green salad.
