Ingredients for 4 servings:
- 800 g carrot(s), organic
- 2 tsp coriander
- 2 tsp Szechuan pepper
- 2 tsp curry powder
- ½ tsp sea salt
- 2 garlic cloves
- 40 ml olive oil
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Wash the carrots thoroughly. Then halve them lengthwise, still with the skin on. Crush the garlic, coriander, and Sichuan peppercorns in a mortar and pestle and add them to the carrots along with the other spices. Pour olive oil over them and mix well. Then place the carrots in an ovenproof dish and roast in the oven at 230°C for 25 minutes.
