Vegan broccoli patties

Ingredients for 4 servings:

  • 500 g broccoli
  • 220 g chickpeas, cooked
  • 2 tbsp chickpea flour
  • 1 ½ tsp curry powder
  • 1 garlic clove(s)
  • 1 cm ginger, fresh
  • n. B. Salt
  • n. B. Pfeffer
  • e.g. chili powder
  • 1 tbsp oil for frying, e.g. coconut oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Clean and wash the broccoli. The stem will be used, so peel it well. Then chop it using a food processor or medium grater. Then chop the cooked chickpeas in a food processor. Mix the broccoli, chickpeas, chickpea flour, and all the spices together well. Press the mixture down. If it’s still too wet, add a little more chickpea flour. Then roll into small patties and fry in a little oil until golden brown on both sides.
