Oven Salmon with Braised Pumpkin and Mashed Sweet Potatoes

- 2 Salmon fillets á approx. 150 grams
- 500 g Orange sweet potatoes
- 0,5 Hokkaido pumpkin
- 0,5 Rosemary and lemon thyme
- Sea salt from the mill
- Pepper from the grinder
- 1 pinch Cinnamon
- Lime olive oil
- Olive oil
- Balsamic vinegar old
- 6 Cherry tomatoes
- 1 pinch Nutmeg
- 1 Preheat the oven to 200 ° degrees circulating air
- Remove the seeds from Hokkaido and cut into 1-2 cm thick wedges, place in a baking dish, season with salt, pepper, rosemary and lemon thyme and drizzle with a little olive oil and braise in the middle of the oven for about 25-30 minutes
- Salmon fillets, wash and pat dry, place in aluminum foil, form a boat out of it, season with salt and pepper, put two sprigs of rosemary and quartered cherry tomatoes in the boat, drizzle with lime oil and a little balsamic vinegar, close the boat and before the end of the pumpkin cooking time 10- Place in the oven for 15 minutes.
- Peel and chop sweet potatoes and cook in boiling water for approx. 10-15 minutes until soft. Pour off the water, mash to a puree and season with pepper, salt, nutmeg and a little cinnamon.
