Klopfers Ende – Fillet of Hare on Bed of Lettuce

The perfect klopfers ende – fillet of hare on bed of lettuce recipe with a picture and simple step-by-step instructions.

  • 4 Pc. Tomatoes
  • 3 Pc. Lettuce head
  • 1 kg Hare fillet
  • 2 Pc. Fresh anchovies
  • 1 Pc. Clove of garlic
  • 8 tbsp Olive oil
  • Salt and pepper
  1. Wash the lettuce and place on the edge of the plate. Cut the tomatoes into slices and season with salt and pepper on the plate.
  2. Remove the silver skin from the hare fillets, sear them and let stand for about 5 minutes.
  3. In the meantime, grind the anchovies and garlic while adding salt and then emulsifying with the hand blender while slowly adding the olive oil.
  4. Then pour over the salad and serve the rabbit on top.
