Klopfers Ende – Fillet of Hare on Bed of Lettuce

- 4 Pc. Tomatoes
- 3 Pc. Lettuce head
- 1 kg Hare fillet
- 2 Pc. Fresh anchovies
- 1 Pc. Clove of garlic
- 8 tbsp Olive oil
- Salt and pepper
- Wash the lettuce and place on the edge of the plate. Cut the tomatoes into slices and season with salt and pepper on the plate.
- Remove the silver skin from the hare fillets, sear them and let stand for about 5 minutes.
- In the meantime, grind the anchovies and garlic while adding salt and then emulsifying with the hand blender while slowly adding the olive oil.
- Then pour over the salad and serve the rabbit on top.
