Quark Lobes on Raspberry Dish with Yogurt Goat Cheese Mousse

Ingredients
 

Raspberry mirror:

  • 600 g Frozen raspberries
  • 0,5 l Sparkling wine
  • 100 ml Raspberry spirit
  • 1 Pc. Lime
  • 5 tbsp Powdered sugar
  • 4 leaf Gelatin

Quark drumsticks:

  • 8 tbsp Flour
  • 2 Pc. Eggs
  • 3 tbsp Sugar
  • 1 pinch Salt
  • 2 tbsp Semolina
  • 1 shot Lemon juice
  • Currants

Yoghurt goat cheese mousse:

  • 200 g Yogurt
  • 1 cups Cream
  • 300 g Goat cream cheese
  • 70 g Sugar
  • 0,5 Pc. Lime zest
  • 6 leaf Gelatin

Instructions
 

Raspberry mirror:

  • Caramelize powdered sugar, add remaining ingredients and let boil down (1 hour).
  • Soak the gelatine in cold water, when it is soft, add to the raspberry mixture. Pass everything through a sieve. Put in the fridge and let rest there for at least 5 hours.

Quark drumsticks:

  • Mix quark, flour, eggs, sugar, salt, semolina, lemon and possibly a few currants to form an even dough. If you want the dough to be a little firmer, thicken it with a little more flour.
  • Heat some sunflower oil in a pan. Since the dough is not malleable, it is best to use two tablespoons for portioning. "Shovel" the desired mass of dough on one and spread the dough into the pan with the other. Bake the quark legs in clarified butter until golden brown on both sides.

Goat cheese mousse:

  • Whip the cream and mix with the yogurt and goat cheese. Heat 100 ml of the mass and dissolve the gelatin in it.
  • Add the gelatin mass together with sugar and lime juice / zest back to the base mass. Put the whole thing in the refrigerator for at least 5 hours.
