Oysters with Saint Agur

Ingredients for 4 servings:

  • 12 oysters
  • 60 g blue cheese (e.g. Saint Agur)
  • 1 bunch of spring onions
  • 1 handful of leaf spinach
  • 50 g sour cream butter
  • 1 tbsp olive oil
  • 1 tsp fish sauce
  • 6 cl ouzo
  • 2 tbsp, heaped breadcrumbs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Preheat the oven to 180°C (top/bottom heat). Thinly slice the spring onions and finely chop the spinach leaves. Heat the butter and olive oil in a saucepan. Add the onions and spinach and cook until translucent. Add the fish sauce and cheese. Melt the cheese, stirring constantly. Add the ouzo and flambé. Place the oysters in the closed shells, rounded down, in the oven. After a short time, they will open. Remove the lids from the oysters and add the oyster water to the cheese sauce. Thicken the sauce with the breadcrumbs. Spread the cheese cream over the oysters and return them to the hot oven for another 10 minutes.
