Paccheri with zucchini and basil

Ingredients for 4 servings:

  • 400 g pasta (paccheri, giant macaroni)
  • 500 g zucchini
  • 1 onion(s), chopped
  • 120 g Parmesan, grated
  • 1 garlic clove(s), chopped
  • 1 tbsp parsley, chopped
  • ½ bunch basil, roughly chopped
  • salt and pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the zucchini and cut into ½ cm thick slices. Heat 6 tablespoons of olive oil in a pan, add the chopped onion, garlic, and parsley. Add the zucchini, season with salt and pepper, and fry briefly, then add ½ glass of water. Cover the pan and simmer the zucchini over low heat for about 15 minutes, until tender. Sprinkle with basil. Cook the pasta al dente, transfer to a large bowl, and toss with olive oil, Parmesan cheese, and zucchini. Serve immediately.
