Palatinate onion soup

Ingredients for 4 servings:

  • 10 m.-sized onion(s)
  • 500 ml sweet cream
  • 1 liter chicken broth
  • 1 slice(s) butter, thumb-thick
  • 3 tbsp flour
  • 200 ml white wine (Palatinate Riesling), semi-dry
  • 1 tsp salt and pepper
  • ½ tsp caraway seeds, ground
  • ½ tsp caraway seeds, whole
  • 3 sprigs chives, finely chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Palatinate Zwiwwelsupp

Dice the peeled onions and lightly brown them in the butter (not too dark). Deglaze with the white wine and reduce by half. Sprinkle the flour over the onions and add the seasonings. Pour in the broth and cream and simmer gently for about 20 minutes, stirring frequently. Season to taste and garnish with finely chopped chives. Serve with baguette (as a starter) or hearty farmhouse bread (as a main course).
