Paleo egg salad with avocado

Ingredients for 2 servings:

  • 5 eggs
  • 2 tbsp avocado(s), diced
  • 1 tbsp mustard
  • 1 handful of chives
  • 1 tbsp lemon juice
  • 1 pinch of salt
  • 1 tbsp olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 23 minutes

Boil the eggs hard for 8 minutes. Then rinse with cold water. Cut the eggs into small pieces and mash them with a fork along with the avocado. Add the mustard, oil, and lemon juice. Chop the chives and add them to the egg salad. Season with salt.
