Pan-fried Vegetables on Rocket in Gorgonzola

- 1 Red Bell pepper
- 1 Onion
- 1 bunch Spring onions
- 3 Carrots
- 1 Kohlrabi
- 250 g Mushrooms brown
- 250 g Cherry tomatoes
- 1 Zucchini
- 200 g Gorgonzola
- 2 Handful Arugula
- Vegetable broth
- Salt
- Pepper
- Paprika powder
- Dried oregano
- Dried thyme
- Dried basil
- Oil
- Cut the carrots and kohlrabi into slices or cubes and cook them almost cooked in the vegetable stock.
- Wash and dice the zucchini, peel and dice the onion, cut the spring onions into rings, clean and dice the bell peppers and sauté everything in the oil.
- Drain the carrots and kohlrabi and add to the vegetables.
- Clean the mushrooms and cut into slices, cut the tomatoes in half, season everything with salt, pepper, paprika, oregano, basil and thyme, and cook for about 5 minutes in the remaining vegetables.
- Crumble the Gorgonzola, let it melt and serve the pan of vegetables on the plate decorated with rocket and bread.
