Ingredients for 4 servings:
- 150 g flour, sifted
- 200 ml milk
- 50 ml mineral water
- 2 eggs
- 1 tsp, leveled salt
- 1 pinch of sugar
- 50 g butter
- 4 slices of Gouda
- 4 slices of cooked ham
- 40 g Parmesan, grated
- some herb pepper from the mill
- some garden herbs, frozen, for garnishing
Instructions
Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

For the pancake batter, whisk together flour, water, and milk until smooth. Beat in one egg at a time, followed by salt and sugar, and let stand for 15 minutes. In a pan, cook 4 thin pancakes, one after the other, in 10g of butter each. Preheat the oven to 160°C (fan assisted). Top each pancake with a slice of cheese and a slice of ham. Roll up the pancakes and place them in a greased baking dish. Sprinkle with grated Parmesan cheese and bake for about 20-30 minutes. Sprinkle with some herb pepper and garden herbs before serving. Serve with a salad.
