Pancakes from the Land of Smiles

Ingredients for 4 servings:

  • 250 g flour
  • 1 egg(s)
  • 1 egg white
  • 2 tbsp sugar
  • 250 ml water
  • 1 tbsp sesame oil
  • 6 tbsp sesame oil, for frying
  • 2 tbsp sesame seeds
  • 1 mango(s), ripe
  • 250 g lychee(s), fresh
  • ½ cup yogurt, cream
  • 3 tbsp cream
  • 1 tbsp sugar
  • 1 tsp lemon juice
  • 1 tbsp orange liqueur
  • some powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

Sift flour into a bowl, mix with egg, egg white, and sugar. Add water. The batter should not be too thin. Finally, stir in oil. Let rest for 30 minutes. Briefly toast the sesame seeds in a pan and set aside. Peel and deseed the mango, then dice the flesh. Peel, halve, and deseed the lychees. Simmer the fruit with the sugar and lemon juice in a saucepan for 5 minutes, stirring frequently. Mix the yogurt with the cream, add the sugar, lemon juice, and orange liqueur. Heat the oil and fry 8 small pancakes. Sprinkle the sesame seeds on top, fill with the fruit, and roll up. Dust with powdered sugar. Serve with the sauce.
