Ingredients for 2 servings:
- 3 eggs
- 6 tbsp flour
- 250 ml milk
- 1 pinch of salt
- 8 slices of salami
- 2 slices of cooked ham
- 1 onion(s)
- some mushrooms
- 2 large tomatoes
- some pepper
- some thyme or herbs of Provence
- possibly paprika powder
- possibly parsley
- 100 g cheese (Gouda), grated
- some butter or oil for frying

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes
Pancakes from the oven
To make the pancake batter, mix the eggs, flour, and milk in a mixing bowl with a hand mixer. Add a pinch of salt and, if desired, a little more flour or milk until the batter reaches the desired consistency. Fry two pancakes in a little oil or butter until golden brown on both sides. Then place each pancake on a pizza pan (or on a baking sheet lined with baking paper). Preheat the oven. Slice the mushrooms, finely chop the onion, and fry both together. Slice the tomatoes. Cut the ham slices into four equal pieces. Now top the two pancakes. Place the fried mushroom and onion mixture in the middle. Alternate the salami and ham slices around them. Place the tomatoes on top. Sprinkle the cheese over the pancakes, making sure they are covered as much as possible. Finally, scatter the herbs on top. Bake the pancakes at 180°C fan/convection oven for about 5 minutes, until the cheese has melted.
