Stuffed pancakes

Ingredients for 3 servings:

  • 250 g flour
  • 5 eggs
  • 375 ml milk
  • 2 pinches of salt
  • 500 g minced meat
  • 375 ml tomato sauce or pureed tomatoes
  • 100 g cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Mix together the flour, eggs, milk, and salt. Then use the batter to make pancakes. I make about 12-15 pancakes. It’s better to make smaller ones and set them aside. Then brown the minced meat and deglaze with the pureed tomatoes. Season with salt and pepper and let it simmer for a while. You can also use fresh tomatoes or tomato paste. The end result should be a nice tomato Bolognese. Fill the pancakes with the Bolognese and roll them up. Now layer the pancakes in a baking dish and sprinkle with cheese before baking. Bake in a preheated oven at 180°C (top/bottom heat) for about 25-30 minutes. This recipe is also great for a party, as you can prepare everything well in advance and then just bake it all later.
