Pancakes with bacon and spring onions à la Gabi

Ingredients for 1 servings:

  • 2 eggs
  • 250 ml milk
  • 125 g flour
  • Salt
  • 100 g bacon, streaky, cut into thin strips
  • 3 spring onions, finely sliced
  • Oil for frying
  • 100 g sour cream
  • some salt

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 5 minutes

makes approx. 8 – 10 servings

Whisk together eggs, milk, flour, and salt to form a smooth batter. Cover and let rest in the refrigerator for 30 minutes. Fry the bacon in a nonstick pan without fat until crispy. Add the spring onions, fry briefly, let cool slightly, and fold into the batter. Add a little oil to the same pan and cook about 8-10 small pancakes from the batter until golden brown. Whisk the sour cream with a little salt until smooth and serve with the still-warm pancakes.
