Pancakes with caramelized apple

Ingredients for 1 servings:

  • 3 eggs
  • 60 g flour
  • 100 ml milk
  • 20 ml carbonated mineral water
  • 1 apple
  • 20 g butter
  • 30 g sugar, brown
  • 200 g natural yogurt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

First, separate the eggs and beat the egg whites until frothy. Place the egg yolks, flour, milk, and mineral water in a bowl and mix well with a mixer, then fold in the beaten egg whites. Tip for single households: You can also put all the ingredients in a sealable container and shake vigorously; this saves you having to use a mixer. Heat the butter in a large pan, add the batter, and cook to brown the pancakes. While this is happening, dice the apple. Once the pancakes are done, place them on a warmed plate and caramelize the sugar in the pan until it becomes liquid (be careful, it burns easily). Now add the diced apple and mix everything well for 2-3 minutes. Finally, spoon the yogurt and caramelized apple pieces onto the pancakes and enjoy.
