Pancakes with lamb's lettuce

Ingredients for 4 servings:

  • 120 g flour
  • 2 eggs
  • 250 ml low-fat milk
  • Salt
  • pepper
  • 2 tsp herbs, chopped
  • 4 tomatoes
  • 2 spring onions
  • 400 g lamb’s lettuce
  • ½ bunch basil
  • 2 tsp olive oil
  • some sweetener
  • 2 tsp vegetable oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine flour, eggs, and milk, season with salt, pepper, and herbs, and let stand for a while. Dice tomatoes, slice spring onions, and toss with lamb’s lettuce. Chop basil, mix with vinegar and olive oil, and season with salt, pepper, and sweetener. Brush each pan with 1/2 teaspoon of vegetable oil and cook 4 pancakes one at a time until golden brown. Transfer pancakes to plates, arrange salad on top, and serve drizzled with dressing.
