Ingredients for 2 servings:
- 2 eggs
- 4 tbsp sugar
- 1 can coconut milk (400 g)
- 1 tbsp baking powder
- 1 cup flour
- ¼ tbsp powder, (Pandan extract)
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 48 minutes
Mix the eggs and sugar until the sugar dissolves and forms a yellow paste. Add the coconut milk and baking powder and stir. Add the flour and stir again. Add the pandan extract and mix. Let the waffle batter rest for 30 minutes. In my waffle iron, the waffles take about 3-4 minutes.
