Ingredients for 4 servings:

  • 4 large potatoes
  • 1 tsp pepper
  • 2 tsp salt
  • 1 m.-sized onion(s)
  • 40 g clarified butter

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Fried potatoes made from raw potatoes

Peel the potatoes, slice them thinly, and place them in a bowl of water. Peel the onion and dice them into small cubes. Place the potato slices on a kitchen towel and cover with another. Heat a pan with clarified butter. Add the potato slices and fry uncovered over medium heat. When the potatoes have browned, add the onion and seasoning. Continue frying uncovered until the potatoes are golden brown. Caution: Don’t turn them too often. When the “Panneschieve” are cooked, garnish with Flönz (a kind of sausage) or a fried egg, if desired, and serve.
