Ingredients for 4 servings:
- 175 g white bread, 2 days old
- 1 onion(s)
- 1 garlic clove(s)
- 250 g tomatoes
- 1 cucumber(s)
- 1 bell pepper(s), yellow
- 150 g arugula
- ½ bunch parsley
- 4 tbsp vinegar (red wine vinegar)
- 8 tbsp olive oil
- Salt and pepper from the mill

Italian bread salad
Cut the bread into cubes and lightly toast them in a dry pan over medium heat. Slice the onions and finely chop the garlic. Finely chop the parsley and roughly chop the arugula. Dice the tomatoes, cucumber, and bell pepper. Mix the bread with the arugula, parsley, tomatoes, cucumber, and bell pepper. Make the dressing from the vinegar and oil and season with salt and pepper. Pour the dressing over the salad and mix well again. Let the salad marinate for at least an hour.
